
Bruschetta is a traditional Italian appetizer featuring slices of toasted bread rubbed with garlic and topped with a variety of fresh ingredients. The most classic version includes diced tomatoes, fresh basil, olive oil, and a touch of salt, creating a vibrant and flavorful dish. This unique version of bruschetta combines the zesty kick of spicy pico de gallo with the luxurious depth of black truffle oil. Freshly toasted French baguette serves as the perfect base for the vibrant pico de gallo, made with ripe tomatoes, onions, jalapeños, and bell peppers. A drizzle of black truffle oil elevates the dish, adding an earthy, aromatic richness that perfectly balances the heat. It’s a bold and sophisticated twist on a classic appetizer.
Ingredients:
- French Baguette – 1 sliced diagonally
- Onions – 1 chopped
- Jalapeños – 2 Chopped
- Red Bell Pepper – 1/2 Chopped
- Tomatoes- 1 chopped
- Salt to taste
- Lemon Juice – 1 Tbsp
- Pepper Powder – 1/2 tsp
- Black truffle oil – 2 Tbsp
- Garlic infused Olive Oil – 1 tbsp
- Shredded Cheese – about 1 cup
Method:
- Preheat the oven to 350F. In a bowl combine the black truffle and garlic infused olive oil. If you don’t have garlic infused oil, add a few cloves of finely chopped garlic cloves.
- Brush the baguette slices with the oil. Bake in the oven for 10 minutes.
- Combine the chopped onions, jalapeños, bell peppers and tomatoes in a bowl. Add lemon juice, salt and pepper.
- Top the baked baguette slices with the pico de gallo and shredded cheese. Bake in the oven for an additional 4 minutes.
- Finish by broiling until the cheese is bubbling and slightly browned.
- Serve warm with a glass of wine.
Note:
The pico de gallo can be substituted with a spicy potato mixture for an Indian twist. Bake it an additional 8 minutes instead of 4 before broiling.
