These yummy citrusy bars are amazing. Bursting with lemony goodness, they are one of my favorite desserts. These melt-in-your-mouth lemon bars are bursting with citrus flavor. Delicious sweet and tart filling over a buttery shortbread crust, make for a yum summer treat.
Ingredients:
Crust:
- Flour – 2 cups
- Sugar – ½ cup
- Salt – ¼ tsp
- Lemon zest – 1 tsp
- Butter – 2 sticks (1 cup) frozen
Filling:
- Flour – ¼ cup
- Sugar – 1 ½ cup
- Eggs – 4
- Lemon Juice – 1 cup
- Lemon Zest- 2 Tbsp
Method:
Crust: Preheat the oven to 350°F. Grease a 9×13″ pan. Sift the flour. Add salt and sugar. Add cold butter and cut using pastry cutter or pulse in food processor till it resembles coarse crumbs. Press onto prepared pan and bake for 20 mins till golden around the edges.
Filling: In a large bowl, mix the sugar and flour. Add the eggs and whisk to combine. Add lemon juice and zest. Mix till combined. Pour over the baked crust and bake for another 20 minutes. Allow to cool, then refrigerate for 2 hours. Sift powdered sugar and cut into squares.
